I can’t remember the last time I made pancakes on actual pancake day, aka Shrove Tuesday.
Originally a Catholic/Christian holiday to use up the eggs, butter and milk ahead of lent as they were considered too decadent for the time of atonement, now it’s largely an excuse to eat lots of them midweek, and a little early Spring delight.
I used Donal Skehan’s recipe, and it was super simple and worked really well. A hot pan and minimal fat on it is key, but these cook really quickly, especially compared to American style pancakes.

Lemon juice and a sprinkle of sugar, then rolled up, is traditional and delicious. Boy Wonder opted for chocolate spread on his. Scoffed almost as fast as they were made.
